Ingredients
2 cups chicken cooked and diced
1 cup sweet corn
1 cup black beans
1 avocado diced
1 small onion diced
1 tsp chili powder
1/2 tsp cumin
1/8 tsp powdered garlic
2 T lemon juice
Salt to taste
1 head of lettuce
Instructions
Salt and pepper your chicken and cook in a skillet over medium-high heat until cooked through. Dice and let cool.
Meanwhile combine corn, black beans, avocado, onion, chili powder, cumin and garlic in a medium bowl. Stir in lemon juice. Add cooled chicken.
Carefully separate the lettuce leaves. Wash and pat them dry. Spoon the chicken mixture into the lettuce leaves, wrap it up like you would a tortilla and enjoy.
